Braised Fennel

Delicious, healthy side dish for pork, fish or poultry

Braised Fennel
  • 2 large Fennel bulbs

  • 3 TBS olive oil

  • Salt, pepper

  • 1/4 cup white wine

  • 1/4 cup sour cherries

  • 1/4 cup water or more

  1. Clean and half the bulbs. Renove outher leaves and trim the bottom. 

  2. Slice to quarter, remove the core and any green leaves, and then slice to 1/2" .

  3. Heat oil in stainless steel pan. (to achive browning bits)

  4. Add the fennel and mix, Cook without stirring to let it brown.

  5. Once desire color achived reduce the heat to low and deglaze with white wine

  6. Cover and continue to cook for 10-15 minutes until soft and add water as needed.

  7. Adjust seasonong and add the cherries

  8. Cover and continue to cook for 10-15 minutes unitl the water is absorbed.  Adjust seasoning and add some acidic (molases, lemon, or vinegar)

Optional but NOT needed: add diced shalot, sliced pea pods, parsley)
