Stuffed Zucchini

This with zucchini stuffed with minced meat and creamy sauce, it's a zucchini flan you won't forget easily.

Stuffed Zucchini


For the stuffed courgettes:

  • 2 large courgettes

  • 600 g of minced meat

  • 60 g of Parmesan cheese

  • 1 teaspoon of chopped parsley

  • 1 slice of bread/pankoo

  • Salt, pepper and nutmeg

  • 1 egg

For the sauce:

  • 5 teaspoon of butter

  • 1 chopped onion

  • 4 teaspoons of flour

  • 380 ml of milk

  • Salt and pepper


  • 60 g of grated Parmesan cheese to sprinkle

  • 60 g of breadcrumbs to sprinkle


  1. Cut each courgette into 2" pieces and empty the core using a pearing knife

  2.  Cut the pulp into cubes and add the minced meat, the Parmesan cheese, the parsley, the bread into small pieces and an egg. Season  with salt, pepper and nutmeg cayen pepper. 

  3. Fill the empty courgettes with the meat filling and place them upright in a 8" baking (pie) pan

  4. Put the butter in a saucepan and add the diced onions, flour and milk. Let the sauce cook over low heat, season with salt and pepper and blend everything. 

  5. Pour the sauce over the stuffed courgettes and cover them with Parmesan cheese and breadcrumbs. 

  6. Brown for 35 minutes at 350 ° F in a convection oven.
