Zucchini Roll - Warm


  • 2 zucchini

  • 8 eggs

  • Salt, pepper, nutmeg

  • 350 g of grated cheddar cheese

  • 1 kg of minced beef

  • 1 finely chopped onion

  • 2 mashed garlic cloves

  • 1/2 tsp of chopped rosemary

  • 1 tsp of tomato paste

  • 1 tsp of ketchup


  1. Cut the zucchini into slices, add salt and let them rest for about 10 minutes so that they drain the excess water and soften slightly. Then spread the slices on a baking sheet lined with parchment paper.

  2. Put the eggs in a bowl and season with salt, pepper and nutmeg. Then beat the seasoned eggs with a whisk until creamy. Gently pour it over the courgettes in the pan.

  3. Bakeg for 15 minutes at 350 ° (flip sheet half time), then leave to cool.

  4. Meanwhile, briefly sauté the minced meat in the onion sauté. Then season with garlic, rosemary, salt, pepper, tomato paste and ketchup. Let the minced meat cook for about 10 minutes over low heat, stirring occasionally.

  5. Sprinkle the cheddar cheese on the zucchini omelette first, which has cooled down, and then spread the minced meat on top.

  6. With the help of baking paper roll the omelette and finish baking the zucchini omelette roll for 15 minutes in a convection oven at 350 ° F. 

  7. Sliced the zucchini roll  stuffed with minced meat and cheddar cheese into individual portion with an irresistible look and taste.
