Lemon cream filling for pies


Lemon Cremeux -Lemon curd is a very rich dessert topping or spread. It’s buttery and sweet with intense tart lemon flavor– like a creamy lemon version of jam. Lemon curd is made from simple ingredients and comes together quickly on the stove. Lemon lovers, this is your jam


Citronen Cream

Ingredients

1/2 cup lemon juice (100g)

2/3 cup sgar (150g)

3 eggs

1/4 tsp salt

1 TBS  lemon zest

1/4 cup + 3tbs cold butter (150)

1 g gelatin bloome on 1 TBS water

Preparation

  1. Bloom the gelatine in water, set aside

  2. In sauce pen whisk the lemon and sugar, addd eggs and salt

  3. Cook over medium heat whisking constantly for 2 minute. until boiling (183ºF)

  4. Off heat add the zest, and gelaint

  5. When temp reduces to 95ºF add the butter and whiske with hand held mixer. 

  6. Transfer to a ball and refrigerate, covered with plastic wrap
