Ingredients
1/2 cup lemon juice (100g)
2/3 cup sgar (150g)
3 eggs
1/4 tsp salt
1 TBS lemon zest
1/4 cup + 3tbs cold butter (150)
1 g gelatin bloome on 1 TBS water
Preparation
Bloom the gelatine in water, set aside
In sauce pen whisk the lemon and sugar, addd eggs and salt
Cook over medium heat whisking constantly for 2 minute. until boiling (183ºF)
Off heat add the zest, and gelaint
When temp reduces to 95ºF add the butter and whiske with hand held mixer.
Transfer to a ball and refrigerate, covered with plastic wrap
