Coconut Pecan Cookies
Coconut Pecan cookies - soft, chewy melt in your mouth
Yields 15 cookies

½ cup (115g) softened salted butter
⅓ cup (65g) granulated sweetener
1 large egg at room temperature
1 teaspoon (5mL) vanilla extract
1 cup (100g) blanched almond flour
¼ cup (28g) coconut flour
½ teaspoon (1g) baking powder
½ teaspoon (1g) baking soda
½ cup (50g) unsweetened shredded coconut
3/4 cup (100g) chopped toasted pecans
½ cup (50g) sugar-free chocolate chips
A - Mix flours, baking soda and powder
B - Cream butter and sugar, add egg and vanilla.
Combine A to B, add shreded cocconut, pecans and choc chips.
Scoop 15 cookis on sheet with Silpat
Bake 350º for 15 minutes and tranfer to rack to cool.
