Coconut Pecan Cookies

Ingredients

INGREDIENTS:

  • ½ cup (115g) softened salted butter

  • ⅓ cup (65g)  granulated sweetener 

  • 1 large egg at room temperature 

  • 1 teaspoon (5mL) vanilla extract 

  • 1 cup (100g) blanched almond flour 

  • ¼ cup (28g) coconut flour 

  • ½ teaspoon (1g) baking powder

  • ½ teaspoon (1g) baking soda

  • ½ cup (50g) unsweetened shredded coconut 

  • 3/4 cup (100g) chopped toasted pecans 

  • ½ cup (50g) sugar-free chocolate chips

Preparation

STEPS:

  1. A - Mix flours, baking soda and powder 

  2. B - Cream butter and sugar, add egg and vanilla.

  3. Combine  A to B, add shreded cocconut, pecans and choc chips.

  4. Scoop 15 cookis on sheet with Silpat

  5. Bake 350º for 15 minutes and tranfer to rack to cool.
