Bulgur pilavi

Pilafs are those exotic rice or bulgur dishes flavored with spice, nuts, and fruits. Others made
with meat, fish and vegetables are know as sultan pilavi. Pilafs are usually served as an accompaniment to a main course of meat or fish, but more substantial pilafs can be served with a
salad to make a full meal. Bulgur pilaf has a nutty flavor.

Ingredients:

·  3 tablespoon extra virgin olive oil

·  1 cup diced onion

·  2 gloves of garlic, minced

·  3 tablespoon salca (Turkish pepper paste)

·  1 teaspoon tomato paste

·  2 cups chicken stock or water

·  1½ cups medium bulgur, washed and drained

·  1 teaspoon ground cumin

·  1 cup diced canned tomato (or 1 medium fresh tomato, peeled, seeded and chopped)

·  1 ½ cup medium diced Anaheim peppers

·  Kosher salt and freshly ground black pepper

Preparation:

  1. Heat the olive oil in a medium skillet over medium high heat. Add the onions and cook, stirring constantly, until the onions begin to soften. Add the garlic, pepper paste, and tomato paste and stir to combine.

  2. Add the water and bring to a simmer, then add the bulgur. Bring to a boil, cover, and turn the heat down to a simmer.

  3. After 10 minutes, add the cumin, tomato, and pepper. Season to taste with salt and pepper. Cover and cook until the bulgur is soft and all of the water has been absorbed. Let the mixture stand, covered, for five minutes before serving.
